Crunchy Granola Outing

Little Talbot State Park:


I made a new friend Daniel who is the brother of one of my hockey team mates. He currently lives in Germany but is back home spending some time with the fam. back in Jacksonville. He ventured up to Amelia Island last Friday and we spent the day out at a State Park on Little Talbot Island. Interesting sights of the day included an armadillo(I've never seen one alive), the beach (I've never seen one at a state park- I'm used to the usual mountain range and rivers), a huge dead fish (photos available upon request) and a little hut made by ??? I was kinda creeped out by this, although since it was a state park I'm sure there's no crazy-hermit-serial killers taking residence at the moment. Velcommin'

I got another Job!


Cafe Karibo, (the vege. friendly resturant), finnaly opened their new bar and they want me to come work there!!! :)

My dad and I met up with John and Kate at Cafe Karibo for their opening yesterday night. Both owners (a married couple) came over and told me that they would like me in the door and working for them. Today I got a call that they would like me to come in tomorrow to start training in the bar - and possibly down the road, in the restaurant side of the cafe. I had to decline for tomorrow because I'm heading to Miami for a hockey tournament but I should receive a phone call on Monday to come in and start training. Now I'll have two jobs where I'm making money in a bar rather than spending it! This is a very good thing.

Blanching

How do the Chinese restaurants get those veges so bright? So crisp? So .... not soggy?

They blanch em!

Really easy:

Boil your snow peas, broccoli, thinly sliced carrots, ... around 30sec or until they are BRIGHT in colour, remove from boiling water and place into a bowl filled with cold water and ice. Better to prep your bowl of ice water when you start your boiling so you know the water will be nice and frigid. Once your main dish is close to ready, put your veggies back in so they can heat up hot and steamy with the dish.
